Appearance: Almost white or light yellow powder. Belonging to the class of fat hydrolysis enzymes, it is also known as one of the three major hydrolytic enzymes along with protease and amylase. The optimal temperature is 35-37 ℃. Enzyme reaction: triglycerides+H2O=diglycerides+fatty acid anions. The primary ester group is most easily hydrolyzed. Glycerol monoesters are poor substrates. There are two similar isoenzymes of lipase: A and B. The isoelectric point (pI) A is 4.9 B is 5.0. The absorbance coefficient (E1% 280) is 13.3. The activator is calcium (CA2+).
