Appearance: Yellowish brown or off white powder. Extracted from Bacillus subtilis and dissolved in water. Under moderate temperature conditions, this enzyme can rapidly hydrolyze the refined alpha-1,4-glucoside bonds of starch molecules, cutting the starch molecules into short chain dextrins of varying lengths and a small amount of low molecular weight sugars from the inside. Both linear and branched chain starches decompose in an irregular manner, causing a rapid decrease in the viscosity of starch slurry (liquefaction, also known as liquefying enzyme). When the storage temperature is not greater than 25 ℃, the enzyme activity should not be less than 90% of the labeled enzyme activity within six months; To improve enzyme activity stability, the calcium ion concentration should not be less than 50-70PPM; Metal ions such as iron, copper, mercury, zinc, and a certain surfactant have a certain impact on enzyme activity. When the liquefaction temperature is too low or the material concentration is too high, the amount of enzyme used should be appropriately increased; When the pH of the material is greater than 8.0 or lower than 5.0, it will cause loss of enzyme activity
