Appearance: Grey to light grey powder. Bacillus subtilis extract, soluble in water and dilute buffer, almost insoluble in ethanol. Enzyme reaction: starch (soluble)+nH2O=n maltose+dextrin. The optimal pH range is 4.0-6.0. The optimal temperature is 50-60 ℃. The isoelectric point (pI) is 4.77. Absorption coefficient (E1% 280) 12.3. Inhibitors include cyclohexyl amylose, methyl - α - glucoside, thiol reagents (4-chloromercuric benzoic acid, iodoacetamide), and heavy metal ions (Cu2+, HG2)
