Characteristic: Liquid. Extracted from Aspergillus oryzae. At higher temperature conditions, this enzyme can rapidly hydrolyze the refined alpha-1,4-glucoside bonds of starch molecules, cutting the starch molecules into short chain dextrins of varying lengths and a small amount of oligosaccharides from the inside, thereby rapidly reducing the viscosity of starch slurry. The liquefaction time is prolonged, and a small amount of glucose and maltose will also be produced
