Product Description：Polyphenol oxidase is a bifunctional,copper-containing oxidase having catecholase and cresolase activity.It is responsible for browning reactions through the phylogenetic scale.The enzyme has a molecular weight of 128KDa.

Appearance: Powder. A type of enzyme that catalyzes the oxidation of phenolic compounds (such as tyrosine, phenolic compounds, etc.) to quinones. This type of enzyme is widely present in nature and widely distributed in plants, such as potatoes, tea, and lacquer tree milk, which have relatively high levels. The melanin in the skin, hair, and cornea of higher animals is also a product generated by the oxidation of tyrosine by this enzyme. Mushrooms and other microorganisms also produce such enzymes. Usually extracted from wild mushrooms, it is one of the biocatalysts and contains copper ions in proteins. Molecular weight 25 × 105. Isoelectric point<5.0; The nitrogen content is about 13.6%. The copper content is about 0.25%. The UV absorption peaks are at 273nm and 330nm. The suitable temperature for catalytic action is 25 ℃.
Usage: It is mainly used as a biochemical reagent in scientific research. It catalyzes the oxidation of tyrosine to dopa and further oxidizes dopa to its precursor, dopaquinone, which can produce melanin. In industry, this enzyme has a dual function: its advantageous side is that it utilizes the oxidation effect of this enzyme for the later fermentation of beer, improving the stability of beer and preventing turbidity; It can also be made into immobilized enzymes for the treatment of phenol containing wastewater. On the downside, fruits and vegetables containing this enzyme, when exposed to air after cutting, will generate corresponding quinones at the incision site due to the catalytic effect of the enzyme, which will appear black brown and must be cut off before consumption. Generally, blanching, acidification, or sulfurous acid treatment can be used to inhibit its effect.
